Betty Ellen Koenig Pfaffengut was born July 9, 1925 to C.C. Koenig & Lydia Sattler
Koenig in Underwood, N.D. She grew up in Underwood and graduated from
Underwood High School in 1943. After graduation, she moved to Fargo, N.D. and
worked as a bank teller, later moving back to Underwood and working at the bank
there.
On January 5, 1947 she married John Pfaffengut in Minot, N.D. During their
marriage they lived in Enderlin, N.D., Hannaford, N.D., Barnesville, MN, Kuna, ID,
and finally settling in Caldwell, ID. Mom worked beside Dad in his grocery stores
and meat markets until the 1980's when dad purchased a car lot in Caldwell, and
went into the car business.
Mom traveled extensively in the United States, Canada, Mexico, Europe, Australia,
and New Zealand. She loved her flower garden, quilting, embroidery, and making
cookies and cinnamon rolls for her friends and neighbors well into her 90's, until
moving to Grace Assisted Living in Boise.
She was preceded in death by her father and mother, brothers Earl and Edwin
Koenig, Adam Reich, her sister Eldora, and her husband John.
She leaves behind three daughters- Connie Gunderson and Joanie Wilken of Boise,
Cheri Rohrer (Jason) of Pleasant Hill, CA, grandchildren Brent Gable (Kirsten) of
Spokane, WA, and Tracy Wilken of Bend, OR, and great-grandchildren Kinyon
Koenig Gable and Brighton Jensen Gable of Spokane, WA.
